Lipidology: analysis of lipids

Lipidology is the scientific study of lipids.

Chromatography: to separate organic compounds from a mixture in gas state.

• Is largely applied to asses cholesterol levels in animal and human fluids and tissues.

Mass spectrometry: Lipidomics is made by the modality of  MS

Iodine number:

• Carbon-carbon double bonds react with Iodine.
• When it reacts, changes from a brownish color to a discoloured.

• Iodine number=mass of iodine reactedmass of lipid×100
• With the iodine number, there can be found the quantity of double bonds.
• It measures the unsaturation level of a fat or oil.
